Creamed Corn

To go with the Spinach Dip, and use up more Parmesan, I made this.

  • 4 ears of corn.
  • 1 1/2 TBSP olive oil
  • salt and pepper
  • 1 TBSP mayo, room temp
  • 1 TBSP sour cream, room temp
  • 1/4 cup milk, room temp
  • juice of 1 lime
  • 3 TBSP Parmesan, grated
  • cayenne


1) Heat the oven to 400F.

2) Take the corn off the cob, and mix with olive oil and salt and pepper.

3) Spread on a baking sheet.

4) Roast the corn for 15-20 minutes, turning once or twice, until they are caramelized.

5) Mix the mayo, sour cream, milk, lime juice, Parmesan and cayenne.

6) Pour the corn into the mayo mixture and mix until the corn is covered in the sauce. Add more salt and pepper if you like.

Paula Dean’s Pasta Salad

Who doesn’t love Paula Dean? Maybe diabetics. Regardless, this one doesn’t seem too bad for you. Recipe taken from here.


  • 1 bag of pasta, 500g
  • water
  • salt
  • 2 cups of cherry tomatoes, halved
  • 1/2 cup mushrooms, chopped
  • 1 jar of olives, water drained
  • 1 green pepper, chopped
  • 1/2 cup mayonnaise
  • 1 cup of balsamic vinaigrette dressing
  • 1 TBSP sugar
  • pepper
  • Parmesan cheese


1) Cook the pasta in salted water until done.

2) Drain and let cool.

3) Add the cherry tomatoes, mushrooms, olives and green pepper.

4) Mix the mayonnaise, balsamic vinaigrette dressing and sugar.

5) Add the dressing and pepper and mix before serving (I made the veggies and pasta before work and added the dressing when I got home so it was not too soggy).

6) Top with Parmesan cheese.

Cooked Mushroom Sandwich

Like I said a few posts ago, I dislike Korean mushrooms uncooked. So I remade the sandwich cooking it.


  • 1 TBSP vegetable oil
  • 2 cloves of garlic, chopped
  • 1/4 onion and red onion, mixed, chopped
  • 1/4 jalapeno, chopped
  • 4 mushrooms, chopped
  • 2 slices of wheat bread, toasted
  • mayonnaise
  • 2 slices of cheese
  • 2 slices of tomato
  • 2 pieces of lettuce


1) Add the vegetable oil to a small pan and heat to medium.

2) Add the garlic, onion, and jalapeno and cook for 2-3 minutes.

3) Add  the mushrooms and cook until soft, for about 3-5 minutes.

4) Allow to cool.

5) Build the sandwich as such: bread, mayo, cheese, mushrooms mixture, tomato, lettuce, mayo, bread.

Raw Mushroom Sandwich

I made this sandwich before remembering how much I hate Korean mushrooms uncooked. Baby Bella for the win!


  • 2 pieces of wheat bread, toasted
  • mayonnaise
  • 2 slices of cheese
  • 1/2 slice of red onion
  • 4 small mushrooms, sliced
  • 2 slices of tomato
  • 2 pieces of lettuce


1) Assemble the sandwich as the ingredients are listed above, with mayonnaise on both pieces of toast. And of course, toast on both sides of the sandwich!

I saw this sandwich being made on Anthony Bourdain Parts Unknown episode about Tangier in Morocco. This is the first recipe I’ve posted with fish, or any other sort of meat. Since I’ve lived in Busan I’ve started eating fish again, because there is nearly no way around it here if you ever want to eat out. I don’t think I’ll continue after I leave.


  • baguette
  • tuna–I used a can of tuna with veggies mixed with a bit of mayonnaise
  • vegetables
  1. onion
  2. red onion
  3. lettuce
  4. tomato
  • Hard boiled eggs, sliced
  • mayonnaise
  • fries


1) Slice the baguette in half and add the tuna, top with the veggies, hard boiled egg, mayo and fries.

Chickpea Sandwich

Recipe taken from here and made more Korea friendly.


  • 1 can of chickpeas, drained and washed
  • 1/2 of a tomato, chopped
  • 1/4 of an onion, chopped
  • pepper
  • chili powder
  • 2 TBSP mayonnaise
  • 2 slices of wheat bread, toasted
  • 2 pieces of lettuce


1) Put the chickpeas in a blender and blend until mashed.

2) Mix the tomato, onion, pepper, chili powder and mayonnaise together.

3) Build the sandwich as such: bread, lettuce, chickpeas, bread.
