Pumpkin Cream Cheese

Recipe taken from here. Great addition to breakfast during this time of the year.


  • 4 oz cream cheese
  • 1/4 cup pumpkin puree
  • 1 TBSP brown sugar
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice


1) Combine all the ingredients!


Blueberry Cheesecake Pancakes

Delicious. I’d double the amount below. Recipe taken from here.


  • Pancakes
  1. 4 oz cream cheese, cut into pieces and freeze overnight
  2. 1 cup flour
  3. 1 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1/4 tsp salt
  6. 2 TBSP sugar
  7. 1 cup milk
  8. 1 egg, beaten
  9. 2 TBSP butter, melted
  • Syrup
  1. 1 cup blueberries
  2. 1/4 cup water
  3. 1/2 cup sugar
  4. 1 TBSP water
  5. 2 tsp cornstarch
  6. 1 TBSP lemon juice, or the juice of 1/2 of a lemon


1) Cut the cream cheese into small pieces.

2) Mix the flour, baking soda, baking powder, salt and sugar in a large bowl.

3) Mix the milk, egg and butter in a small bowl.

4) Mix the dry ingredients into the wet ingredients.

5) Mix in the cream cheese.

6) Heat a pan over medium heat and melt a bit of butter in it.

7) Pour 1/4 cup of the mixture into the pan and cook until it bubbles, then flip it.

8) Cook though, about 2 minutes.

9) Repeat with the rest of the batter.

10) Bring the blueberries, water, sugar to a boil.

11) Reduce and simmer for 5 minutes.

12) Mix the water and cornstarch in a small bowl.

13) Add the cornstarch mixture to the blueberry sauce and cook until it thickens.

14) Pour sauce over pancakes.

Blueberry Cheesecake Pancakes

BF Oatmeal Pancakes

This is a Bobby Flay recipe, so it was taken from Food Network.

I didn’t do the apples because…I don’t have any nor access to the spices.


  • 1 1/2 cup oats
  • 1 cup buttermilk
  • 2 1/2 cups flour
  • 2 TBSP sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 4 eggs
  •  1 1/2 cup milk
  • 2 TBSP maple syrup
  • 1 tsp vanilla
  • vegetable oil


1) Combine the buttermilk and oats in a small bowl and let sit for 15-30 minutes.

2) Mix the flour, sugar, baking powder, baking soda, salt in a large bowl.

3) Mix the eggs, milk, maple syrup, and vanilla in a medium bowl.

4) Add the buttermilk mixture to the milk mixture and stir to combine.

5) Add the milk mixture to the flour mixture and stir until combined. It will be lumpy.

6) Cover.

7) Let sit for 15 minutes.

8) Heat the oil in a large pan on or on a griddle.

9) Make pancakes using about 1/4 cup of batter.

10) Let cook for about 2 minutes on each side.

11) Serve with maple syrup.

BF Oatmeal Pancakes 005

Oatmeal Nutella Pancakes

I’ve made these a few times before but this is the first time since the food blog was started (at least on this website). Recipe taken from here.

Usually, when you only have baking soda and a recipe calls for baking powder you can triple the amount of soda, but don’t here and it just gives it a chemical like flavor. You don’t need them to rise too much anyway.

This is perfect for one serving.


  • 1 TBSP vegetable oil
  • 1/2 cup oatmeal
  • 1/2 cup egg whites (about 3 eggs)
  • pinch of cinnamon
  • pinch of baking powder
  • pinch of salt
  • 1/2 tsp vanilla extract
  • Nutella


1) Heat the vegetable oil in a small pan.

2) Mix all the ingredients together.

3) Put the batter in the pan in 2-3 pancakes.

4) After 2-3 minutes, shake the pan and if they should move freely off the bottom of the pan. Flip them.

5) After 2-3 minutes they should be cooked though. You can check by cutting one in half with the spatula.

6) Serve topped with Nutella.
