Avocado Egg Wraps

Recipe taken from here. It makes 3-4 wraps.


  • 1 avocado, smashed
  • 4 eggs, hard boiled and seperated
  • 2 tsp red wine vinegar
  • salt and pepper
  • 8 green onions, chopped
  • salsa
  • tortilla(s)


1) Combine the avocado with the yolks and mash it up good!

2) Slice the egg whites and add them.

3) Add the red wine vinegar, salt and pepper and green onions.

4) Wrap this mixture up with salsa in the tortillas.

Lemon Cupcakes

This is a small recipe, but great for potluck with no leftovers! Recipe taken from here but with more lemon added!


  • cupcake
  1. 3/4 cup flour
  2. zest of 1 lemon
  3. 3/4 tsp baking powder
  4. pinch of salt
  5. 4 TBSP butter, room temperature
  6. 1/4 cup + 2 TBSP sugar
  7. 1 egg
  8. 1/2 tsp vanilla extract
  9. 1/4 cup milk
  • frosting
  1. 4 TBSP butter, room temperature
  2. 3/4 cup granulated sugar
  3. juice of 1 lemon
  4. zest of 1 lemon


1) Preheat oven to 350F/170C or toaster oven to 130C.

2) Combine the flour, lemon zest, baking powder and salt.

3) In another bowl, combine the butter and sugar.

4) Add the egg and vanilla to the butter mixture and mix.

5) Add 1/3 of the flour mixture to the butter mixture and mix.

6) Add half the milk, mix, 1/3 of the flour, mix, the rest of the milk, mix, and the rest of the flour and mix.

7) Pour into baking tins.

8) Bake for 10-15 minutes or until a toothpick comes out clean.

9) Let cool before adding the frosting.

10) Combine the butter and powdered sugar.

12) Add the lemon zest and lemon juice.

13) Top the cupcakes with the frosting.

Mushroom and Spinach Quesidillas

When I bought tortillas in a shop in Jagalchi, Busan, Korea, an old lady, grabbed them, held them up, and asked the clerk what they were for. She shook her head. I was so sad and hope someday I stop thinking of that whenever I see tortillas. The old lady’s teeth were brown-yellow and stuck out at 75-90 degree angles, so I hope that image goes away soon too…


  • 2 TBSP vegetable oil
  • 2 cloves of garlic, chopped
  • 1/4 red onion, chopped
  • 3-4 mushrooms, chopped small
  • 1/2 jalapeno, chopped
  • 1 cup of spinach, chopped
  • salt and pepper
  • red pepper powder
  • 2 tortillas
  • cheese–I had slices and used 4 but 1/4-1/2 a cup of shredded should work too


1) Heat the oil in a large pan to medium.

2) Add the garlic and onion and cook until it starts to brown.

3) Add the salt, mushroom and jalapeno and cook for 2-3 minutes.

4) Add the spinach and pepper and cook until the spinach is wilted, about 1-2 minutes.

5) Remove from the pan.

6) Add the red pepper powder to the pan (and turn the fan on) and add one of the tortillas.

7) Add half the cheese, the veggies, the rest of the cheese and another tortilla with more red pepper powder on top.

8) Flip when the cheese is melted 100% on the bottom and starting to on the top. You can pull it apart to check. Should be about 2-3 minutes.

9) Remove when you cannot easily pull it apart anymore. Should be another minute.

10) Top with green onion and serve with salsa (and guacamole and sour cream if you can get it)

Lemon Apple Bars

Recipe taken from here, but halved and with extra lemon! It’s almost like a granola bar. I found the bottom a bit dry on it’s own, but when mixed with the rest it’s great.


  • 1 1/8 cups flour
  • 1/6 cup light brown sugar
  • 1 tsp cinnamon
  • 1/3 cup + a bit of butter
  • 1 TBSP cold water
  • 2 apples, peeled and diced
  • 2 TBSP sugar
  • zest of 1 lemon
  • juice of 1 lemon
  • 1/6 cup raisins
  • 1/6 cup dried cranberries
  • 1/3 cup oats
  • 1/3 cups walnuts, chopped


1) Preheat the oven to 380F/180C or the toaster oven to 135C.

2) Mix the flour, brown sugar, butter, cinnamon and butter.

3) Slowly add the water until the mixture forms a dough that sticks together.

4) Press half into the bottom of a tin or baking tins and bake for 20 minutes. Place the rest of the dough in a plastic bag or cling wrap and freeze. After this I turned off the toaster oven not to waste electricity because the apples had to cool as well.

5) Add the apples, sugar, lemon zest and lemon juice into a pan over low heat until the sugar dissolves.

6) Increase the heat to medium and place a lid on the pot and cook for 10 minutes, keeping an eye on them because they could burn.

7) Allow to cool before mixing in the raisins and cranberries.

8) Add the raisins and cranberries. This was when I turned the toaster oven back on.

9) Place on top of the dough.

10) Grate the frozen dough and mix with the walnuts and oats.

11) Sprinkle on top of the apple mixture.

12) Bake for 30 minutes or until the top is golden.

I love making fries. I’ve made them for many people and they always ask how….it’s super easy!

I recently made them for a Bocadillo. I don’t usually make them so thin, but if I made wedges it would not have worked inside of a sandwich.

Here are a few tips:

  1. You can leave the skin on or off. If you leave the skin on be sure to wash it.
  2. You can cut them thin or thick. The thicker they are they lower you want the temperature so they cook though before getting crispy on the outside.


  • 2 small potatoes
  • salt and pepper
  • 2 TBSP olive oil


1) Preheat the oven to 200C if you have thin fries or 130C if you have thick ones. You can adjust this as well when you check on them.

2) Cut the potatoes how you like.

3) Mix with salt and pepper and oil in a bowl.

4) Bake until the outside is crispy, about 10 minutes for thin fries or 20 minutes for thick ones, but keep an eye on them to crisp to your likeness.

I saw this sandwich being made on Anthony Bourdain Parts Unknown episode about Tangier in Morocco. This is the first recipe I’ve posted with fish, or any other sort of meat. Since I’ve lived in Busan I’ve started eating fish again, because there is nearly no way around it here if you ever want to eat out. I don’t think I’ll continue after I leave.


  • baguette
  • tuna–I used a can of tuna with veggies mixed with a bit of mayonnaise
  • vegetables
  1. onion
  2. red onion
  3. lettuce
  4. tomato
  • Hard boiled eggs, sliced
  • mayonnaise
  • fries


1) Slice the baguette in half and add the tuna, top with the veggies, hard boiled egg, mayo and fries.

Chickpea Sandwich

Recipe taken from here and made more Korea friendly.


  • 1 can of chickpeas, drained and washed
  • 1/2 of a tomato, chopped
  • 1/4 of an onion, chopped
  • pepper
  • chili powder
  • 2 TBSP mayonnaise
  • 2 slices of wheat bread, toasted
  • 2 pieces of lettuce


1) Put the chickpeas in a blender and blend until mashed.

2) Mix the tomato, onion, pepper, chili powder and mayonnaise together.

3) Build the sandwich as such: bread, lettuce, chickpeas, bread.
