Salt and Pepper Tofu

Going through a tofu craze. I thought the sugar would make this a bit too sweet but it doesn’t. For the second serving I added lemon juice and it made it even better (lemon and lime are my favorite flavors so that’s not too surprising). Recipe taken from here.


  • 1 block of tofu, sliced
  • 3 tsp salt
  • hot water
  • oil
  • 3 cloves of garlic, chopped
  • 1-2 chilli peppers, de-seeded and chopped
  • 2 green onions, chopped
  • 1 tsp pepper
  • 1 tsp sugar
  • rice

1) Put the tofu in a bowl and add 2 1/4 tsp salt and the hot water so it just covers it and let sit 15 minutes.

2) Dry the tofu. I do this by placing 4 layers of paper towels on a flat surface, the tofu, and then 4 more layers, topping it with something heavy (a large bowl with heavy cans or jars in it). It should dry for about 15 minutes, I change out the paper towels every 5 minutes.

3) Add oil to a pan, enough that it comes up a bit on the sides and heat to medium.

4) Add the tofu in batches and cook until it is browned, about 2-3 minutes on each side.

5) Let the tofu dry again on paper towel.

6) Add the garlic, chillies, and green onion and cook for 15 seconds to 1 minute, until it smells delicious.

7) Add the tofu and salt, pepper and sugar and cook until heated though, about 2-3 minutes.

8) Serve with rice.

Tofu Parmesan Open Faced Sandwich

I thought the sauce was fantastic for this and I was amazed my mozzarella was actually good. Recipe taken from here.


  • 1 1/2 cups chopped tomatoes
  • 3 cloves of garlic
  • 1 TBSP dried basil
  • 1 cup of water
  • 1/3 cup Parmesan
  • 1/2 cup bread crumbs
  • 1 egg
  • 3 TBSP Italian seasoning (I used a mix of Rosemary, Basil and Thyme)
  • 1 block of tofu, drained and dried a bit, sliced into 4-6 slices (depends on the number of sandwiches you want to make)
  • 4 TBSP olive oil
  • 2 slices of bread
  • 4-6 slices of mozzarella
  • 1/2 cup spinach


1) Heat the tomatoes, garlic, basil and water in a pan until thickened (it takes about 10-15 minutes, so don’t worry!)

2) Mix the Parmesan, bread crumbs and Italian seasoning.

3) Dip the tofu in the egg and then the Parmesan mixture.

4) Heat half the olive oil in a pan and add the tofu, cooking on medium-high heat for 3-4 minutes on each side.

5) Top as such: bread, tomato sauce, tofu, mozzarella cheese, tomato sauce and bake on ‘toast’ setting for 2-4 minutes.

6) Heat the rest of the olive oil in a pan.

7) Add the spinach and cook until wilted, about 2-3 minutes.

8) Serve on the side, or on top of the sandwich.

Lemon Tofu

Recipe taken from here and reduced to be just one block of tofu. I’d suggest adding more lemon, I just added it to the rice.


  • 1 block of tofu, cut into 1/2 inch thick slices and dried
  • 1 TBSP soy sauce
  • 1 TBSP lemon juice
  • 1 TBSP olive oil
  • 1 TBSP mustard
  • 1/2 tsp sugar
  • 1/2 tsp basil
  • salt and pepper
  • rice


1) Mix the ingredients other than the tofu.

2) Put the tofu in a bag and add the sauce.

3) Let sit for a minimum of 1 hour. I let it sit while I went to work.

4) Preheat the oven to 350F/170C or a toaster oven to 140C.

5) Bake for 25 minutes, flipping in the middle and adding more sauce if necessary.

6) Serve with rice

Chocolate Banana Bread

Recipe taken from here. And I’m finally all out of bananas!


  • 1/4 cup chocolate chips (I used a mixture of dark and milk)
  • 2 bananas, mashed
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1/4 cup canola oil
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sugar
  • 1/2 cup buttermilk
  • 1 tsp rum/vanilla extract


1) Heat the oven to 350F/175C or toaster oven to 140C.

2) Melt the chocolate in a pan or microwave and let sit while you do the rest of the mixing.

3) Mash the banana with the sugars until it is almost smooth.

4) Add the canola oil and eggs and mix.

5) Add the flour, baking powder, baking soda, and sugar and mix.

6) Add the buttermilk and rum and mix.

7) Take one cup of the batter and mix it with the chocolate.

8) Pour the banana batter into the pan(s). Add the chocolate batter. Add more banana batter and more chocolate batter. Swirl with a knife.

9) Bake for 40 minutes, or until a toothpick comes out clean and the top is browning.

I wanted to show off ways to use tofu and this seemed like a great way! Taken from here.


  • 4 TBSP olive oil, divided
  • 3/4 cups onion, diced
  • salt
  • 2 cups mushrooms, chopped
  • 3 cloves of garlic, diced
  • 1/2 tsp red pepper powder
  • 1 block of tofu, dried and crumbled
  • 1 egg
  • 1/4 cup bread crumbs
  • pepper
  • pasta sauce
  • pasta


1) Heat 1/2 the oil to medium heat in a medium skillet.

2) Add the onion and a bit of salt and cook for 3-5 minutes.

3) Raise the heat to high and add the mushrooms, garlic and red pepper powder and cook for 4-5 minutes.

4) Add the vegetables to a blender or food processor and blend a bit.

5) Add the tofu, egg, and 1/2 tsp salt and blend until combined.

6) Add the bread crumbs and mix until combined.

7) Add the black pepper and scrape out of the blender/food processor .

8) Make balls of about 1 inch and let sit for 2-8 hours (I went to work and came back and finished them off).

9) Heat the rest of the oil in a pan to medium heat and add the balls.

10) Heat until it they are browned, roll them over continue browning all around.

11) Add the sauce to a large pan and heat the tofuballs all the way though, about 15 minutes.

12) Serve with pasta.

Spicy Baked Tofu

I’m loving tofu more and more and finding different ways to eat it (healthier than frying hopefully). Recipe taken from here with a change.


  • 1 block of tofu, sliced into 1/2 inch slices and pressed.
  • 3 TBSP sweet chili sauce
  • 2 TBSP soy sauce
  • 1 TBSP rice vinegar
  • 1 tsp sesame seeds
  • 1 clove of garlic, grated
  • 1 inch piece of ginger, grated
  • rice


1) Preheat the oven to 350F/175C or toaster oven to 140C.

2) Mix all the ingredients other than the tofu.

3) Let the tofu sit in the sauce until the oven is preheated.

4) Bake the tofu for 15 minutes.

5) Serve with rice.

Spicy Baked Tofu 002

Banana Walnut Cinnamon Muffin

I looked at about muffins and bread recipes and came up with this. Made for potluck so of course it is in Tupperware already.


  • 4 bananas mashed
  • 1/2 cup dark brown sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 1/4 cup butter, melted
  • 1 tsp Bacardi 151 (or vanilla, I don’t have vanilla and you can substitute vanilla with dark rum or brandy)
  • 1 3/4 cups wheat flour
  • 1/4 cup oats
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 cup chopped walnuts


1) Preheat the oven to 350F/175C or toaster oven to 140C.

2) Mix the bananas with the brown sugars and egg.

3) Add the butter and Bacardi 151.

4) Add the flour, oats, salt, baking soda and cinnamon and mix slowly so the flour doesn’t fly everywhere.

5) Add the walnuts.

6) Add the batter to baking tins and bake for 20 minutes.
