Creamy Cheddar Potato Soup

Recipe taken from here. Last soup recipe for awhile!


  • 3 TBSP butter
  • 1 onion, chopped
  • 2 cups of water
  • 3 potatoes, peeled and cubed
  • 3 TBSP flour
  • 3 cups milk
  • 1 cup of cheddar cheese
  • salt and pepper


1) Melt the butter in a medium sized pan.

2) Add the onion and cook until soft, 3-5 minutes.

3) Bring the water to a boil in a large pot.

4) Add the potatoes and cook until tender, about 5-10 minutes depending on the size of your cube.

5) Drain the water, reserving 1 cup.

6) Add the onions, butter, and flour to the potatoes in the large pot.

7) Add the 1 cup of reserved water and milk and bring to a simmer.

8) Add the cheese and let simmer for 20 minutes.

9) Add salt and pepper.

Panera Broccoli Cheese Soup

Who doesn’t love Panera? And I haven’t even had it in 3 years. Probably why even though I altered this recipe it still tasted pretty good. Recipe taken from here.


  • 1 TBSP + 1/4 cup butter
  • 1/4 cup flour
  • 1 onion, chopped
  • 2 cups half and half
  • 2 cups vegetable stock/broth
  • 1 head of broccoli, chopped
  • 1 cup of shredded carrot
  • 1 cup of cheddar cheese
  • salt and pepper


1) Melt the 1 TBSP butter in a small pan.

2) Add the onion and cook until it is soft and remove from the heat.

3) Melt the 1/4 cup butter in a large pot.

4) Add the flour and stir constantly until combined.

5) Add the half and half and stir until combined.

6) Add the vegetable stock/broth and simmer for 20 minutes.

7) Add the broccoli, carrot and onion and cook for 20 minutes.

8) Add the cheese, salt and pepper and stir until combined.

Irish Soda Bread

I didn’t expect this to turn out well, since I’m making it in a toaster oven, but it came out great flavor wise! It is a bit dense, so I guess I’ll have to work on using a toaster oven a bit more.

  • 4 cups flour
  • 4 TBSP sugar
  • 1 tsp baking soda
  • 1 1/2 tsp salt
  • 4 TBSP butter, cold, and cut into small pieces
  • 1 3/4 cups buttermilk
  • 1 egg, beaten
  • 1 tsp orange zest
  • 1 cup dried currents, I used 1/2 cup cranberries, 1/2 cup raisins mixed with 1 TBSP of flour


1)Preheat the oven to 375F/190C or toaster oven to 150C

2) Mix the flour, sugar, baking soda, and salt in a large bowl.

3) Add the butter and mix until the butter is no longer found in clumps.

4) Mix the buttermilk, egg, and orange zest in a small bowl.

5) Slowly add the buttermilk mixture to the flour mixture.

6) Mix in the dried currents (cranberries, raisins).

7) Flour a cutting board and pour the batter on it and knead it a bit until it can form a loaf.

8) Place onto a baking tray with tinfoil and cut an X into the top.

9) Bake for 45-55 minutes.

10) Allow to cool before serving.

Chocolate Pie

It’s Pi Day! So I had to make pie.

My meringue didn’t turn out great, probably because I can’t stand to do it with a fork and a blender apparently doesn’t work.

  • Crust
  1. 1 1/2 cups flour
  2. 1/2 tsp salt
  3. 2 TBSP sugar
  4. 1/2 cup oil
  5. 2 TBSP milk
  • Chocolate
  1. 4 TBSP cocoa
  2. 3/4 cup sugar
  3. 5 TBSP flour
  4. 1/4 tsp salt
  5. 1 1/2 cups milk
  6. 2 egg yolks
  7. 1 TBSP butter
  8. 1/2 tsp vanilla
  • Meringue
  1. 2 egg whites
  2. 1/8 tsp sugar
  3. 4 TBSP sugar


1) For the crust: Preheat the oven to 350F/176C.

2) Combine the dry ingredients.

3) Mix in the milk and oil.

4) Press the dough into a pie pan and poke holes in it with a fork.

5) Bake for 10-15 minutes, or until it begins to brown.

6) Once the pie crust has been removed, begin on the chocolate layer by mixing the cocoa powder, sugar, flour, salt, milk and egg yolk in a pan or pot.

7) Being to heat the pan or pot, stirring until it begins to simmer and thicken.

8) Once the chocolate has thickened to your liking, add the butter and vanilla.

9) Add to the pie crusts.

10) Make the meringue: Mix the egg whites and salt.

11) Add the sugar and mix until it becomes thick (I used a blender as I do not have a mixer).

12) Add the meringue to the top of the chocolate.

13) Cook until the meringue beings to brown, about 10-15 minutes.

Cheddar Beer Soup

This is a thin soup with chunks, which you can easily change with a blender if you want.

Decided to stop making soups after I go to India (March 23-April 1).

  • 1 TBSP olive oil
  • 1/2 onion, chopped
  • 1 garlic clove, chopped
  • 1 large carrot, chopped
  • 2 leeks, chopped
  • 1/3 cup flour
  • 2 cups vegetable stock/broth
  • 2 cups milk
  • 1 1/2 cups beer (the foam can go over, I looked for the beer itself to be at 1 1/2)
  • 1 cup cheddar cheese, shredded
  • Parmesan cheese, to serve


1) Heat the oil to medium in a large pot.

2) Add the onion and garlic and cook for 1-2 minutes.

3) Add the carrot and leeks and cook for 5 minutes, or until soft.

4) Add the flour and mix until the flour is no longer white.

5) Add the vegetable stock/broth, milk and beer and cook for 5-8 minutes, or until the beer foam has disappeared.

6) Add the cheese and stir until combined.

7) Cook for 20 minutes more.

8) Serve topped with Parmesan cheese.

Chocolate Peanut Butter Oatmeal Cookies

Mouthful to say the name, but there’s a lot of stuff in these cookies. Don’t eat a mouthful and try to say the name though. Recipe taken from here.


  • 1/2 cup butter, room temperature
  • 1/2 cup white sugar
  • 1 1/4 cup brown sugar
  • 1/3 cup peanut butter
  • 1 egg + 1 egg yolk
  • 2 tsp vanilla
  • 1 cup oatmeal
  • 1/2 tsp baking soda
  • 1 1/4 cup flour
  • 1 cup chocolate chips, I used dark chocolate
  • 1 cup white chocolate chips, raisins and cranberries (you can leave this out or add different things, like nuts or seeds or other dried fruit)


1) Preheat the oven to 325F/160C or the toaster oven to 130C

2) Mix the butter and the sugars.

3) Add the peanut butter and mix.

4) Mix in the egg, egg yolk and vanilla.

5) Add the oatmeal and baking soda and mix until combined.

6) Slowly add the flour, I did it in 1/2 cup, 1/2 cup, 1/4 cup batches.

7) Add the chocolate chips and whatever else you are adding. This part I found was best to do with my hands.

8) Make the dough into just-larger-than-golf-ball-sized balls and place onto a tinfoil lined cooking tray and cook for 10-12 minutes.

Carrot and Cheese Soup

Recipe taken from here. I used larger carrots than I should have so it has a much more carrot-y flavor than in their post.


  • 3 TBSP butter
  • 3 TBSP olive oil
  • 1 onion, chopped
  • 2 leeks, chopped
  • 2 carrots, chopped
  • 1 garlic clove, chopped
  • 1/4 cup flour
  • 4 cups vegetable broth/stock
  • 1 cup milk
  • 1 cup cheddar cheese
  • 1 tsp mustard
  • salt and pepper


1) Heat the butter and olive oil in a large pot.

2) Add the onion, leeks, carrot and cook for 5-7 minutes until they begin to soften.

3) Add the garlic and cook for 1-2 minutes until you can smell it.

4) Add the flour and stir until it disappears.

5) Add the vegetable broth/stock and bring to a boil.

6) Bring back down to a simmer and simmer for 45 minutes.

7) Remove from the heat and either use an immersion blender or put the soup into a blender and make it smooth.

8) Put the soup back on the heat and add the milk, cheese and mustard and stir until smooth.

9) Season with salt and pepper.
