Snowballs

At my ‘orphan’ Christmas dinner (my friend called all the teachers in Korea orphans because we don’t have family to spend time with in Korea) we couldn’t remember if these were called ‘Eskimo balls’ or ‘snowballs’ or any other name…turns out it was ‘Eskimo snowballs’ but I don’t see a point in calling it that, as snowballs gets the point across.

Ingredients:

  • 1 cup of butter, softened
  • 4 TBSP water
  • 1 tsp vanilla extract
  • 6 TBSP cocoa powder
  • 1 1/2 cups sugar
  • 4 cups of oats
  • shredded coconut
  • finely chopped peanuts (or other nuts)

Directions:

Cookies 0261) Combine the butter, water and vanilla. Be careful as the water and vanilla may splash around until you get the butter at a good mixing consistency.

2) Add the cocoa powder, sugar and oats and mix until combined. You may need to add more water to make the dough stick together.

3) Create 1-inch sized balls and roll in either coconut or peanuts.
