Tofu Wraps

Ingredients:

  • 1 tsp olive oil
  • 1 tsp sesame oil
  • 1 block of tofu, cut into slices and pressed dry
  • 2 tsp garlic, grated
  • 2 tsp ginger, grated
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 5 green onions, chopped
  • salt and pepper
  • 1/4 cup water
  • 1/4 cup peanut butter
  • 2 TBSP soy sauce
  • 2 TBSP lemon/lime juice
  • lettuce leaves

Directions:

1) Heat the oils in a large pan.

2) Add the tofu and saute for 5 minutes or until browned on each side.

3) Add 1 tsp ginger, 1 tsp ginger and all the bell peppers and cook for another 5 minutes.

4) Add the green onion and salt and pepper and cook for 1 minute.

5) Remove from the heat and allow to cool while you make the sauce.

6) Add the 1 tsp garlic, 1 tsp ginger, water, peanut butter, soy sauce, and lemon/lime juice to a small pan and mix until smooth and combined.

7) Build as such: lettuce, tofu/peppers, sauce and wrap to eat.

PB and Nutella Cookies

I looked at bunch of different recipes because I wanted to make peanut butter cookies, but something with chocolate chips, and something with oats because I have too much…nutella would be nice too. Until I realized I didn’t have much peanut butter or nutella…These were for pot luck.

Ingredients:

  • 1/4 cup white sugar
  • 1/4 cup light brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp vanilla/rum
  • 1/3 cup peanut butter
  • 1/3 cup nutella
  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup oats
  • 1 cup chocolate chips

Directions:

1) Preheat the oven to 350F/170C or toaster oven to 140C.

2) Mix the sugars and butter.

3) Add the egg and vanilla.

4) Add the peanut butter and nutella.

5) Add the flour, baking soda, salt and oats.

6) Add the chocolate chips.

7) Make into balls about 1 TBSP big and place on tin foil.

8) Bake for 10-15 minutes or until you can see that the bottoms are browning a bit.

9) Allow to cool slightly before removing from the tin foil.

PB Nutella Chocolate Chip Cookies 004

My Korean coworker got married 2 weekends ago and went straight to Hawaii. I wanted to make something American to welcome her back and what’s more American than brownies? or peanut butter and jelly? Oh wait…

Ingredients:

  • 1/2 cup butter
  • 1/4 cup peanut butter + more for the top
  • 1 cup light brown sugar
  • 1 egg
  • 2 tsp vanilla/rum
  • 1 1/4 cup flour
  • 1/4 tsp salt
  • jelly (without many chunks) to top

Directions:

1) Heat the oven to 350F/170C or toaster oven to 140C.

2) Melt the butter in a pan.

3) Add the peanut butter and melt and mix.

4) Pour the butter mixture into a large bowl with the light brown sugar and mix.

5) Add the egg and vanilla and mix.

6) Add the flour and salt and mix.

7) Pour into your baking tin(s).

8) Top with peanut butter and jelly and swirl.

9) Bake for 20-25 minutes or until a toothpick inserted comes out clean (the top might still mark it though, so watch out).

Tofu Cabbage Soup

Recipe taken from here and made smaller.

Ingredients:

  • 2 TBSP sesame oil
  • 3 green onion, chopped
  • 3 TBSP ginger, minced
  • 4 cups vegetable broth/stock
  • 2 TBSP soy sauce
  • 2 cups kimchi
  • 3 cups of bok choy or similar lettuce, cabbage
  • 1/2 cup mushroom
  • 1 block of tofu, cubed
  • 1/2 jalapeno, chopped
  • 6 oz noodles (buckwheat, soba)

Directions:

1) Heat the oil in a large pot

2) Add the green onion, and ginger and heat for 2-3 minutes.

3) Add the broth, soy sauce, kimchi and hard parts of the bok choy/cabbage and cook for 10 minutes.

4) Add the soft part of the bok choy/cabbage, mushroom, tofu and jalapeno and cook for 5 minutes.

5) While the tofu is cooking, cook the noodles in a separate small pot.

6) Add the noodles to the soup and serve.

Mexican Brownies

Ingredients:

  • 1 cup of butter, melted
  • 2 cups sugar
  • 4 eggs
  • 2 tsp vanilla/rum
  • 2/3 cup cocoa powder
  • 1 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder

Directions:

1) Heat the oven to 350F/170C or the toaster oven to 140C.

2) Mix the butter, sugar, eggs and vanilla/rum.

3) Add the flour, cinnamon, chili powder, salt and baking powder and mix until combined.

4) Pour into baking pans and cook for 20-25 minutes, or until a toothpick inserted in comes out clean.

Tofu Cabbage Fried Rice

Ingredients:

  • olive oil
  • 1 block of tofu, cut into cubes
  • 3 cups of cabbage, sliced thin
  • 3 cups of rice
  • 3 TBSP soy sauce
  • 1 TBSP sesame oil
  • 1 can of peas, drained
  • 3 green onions, chopped
  • salt and pepper

Directions:

1) Add the oil to a small-medium pan and heat to medium-high.

2) Add the tofu and let fry, shaking the pan to flip them bit by bit until toasted to the point where when mixed they won’t fall apart (test this by trying to squeeze one (with your hand or a spoon)

3) Remove the tofu.

4) Add more olive oil to a large pot or pan and heat to medium.

5) Add the cabbage and cook until wilted, this will be quicker if you have a lid to put on the pot, as it took about 2-5 minutes for me.

6) Add the rice, soy sauce, sesame oil and mix.

7) Add the peas, green onions, salt and pepper and tofu and cook until the peas and tofu are heated though, about 5 minutes.

Spicy Basil Tofu

Still on a tofu kick–for about a week, then sandwiches because I opened my Mayo from America (!) for the weekend. Recipe taken from here and can easily be made more or less spicy or basily depending on your taste, as there are no measurements.

Ingredients:

  • 1 block of tofu, sliced thin and dried
  • olive oil
  • hot sauce
  • basil

Directions:

1) Heat the toaster oven to ‘toast’, or the oven to as high as it goes.

2) Spray the olive oil, or put your thumb over the top of the bottle and drizzle it, on the tofu.

3) Add the basil.

4) Add the hot sauce.

5) Place in the oven until crispy, about 10 minutes.

If your tofu was not sliced that thin, I would put the oven at a lower temperature (no lower than 350F/170C for an oven or 140C for a toaster oven) and it would take longer to cook, but it would be cooked though and not just toasted on the top.
